Nourishing Beef Stew

Ingredients:

  • 1.5 TBSP Grass-fed organic ghee

  • 800g of Grass-fed beef (chuck or skirt or any stewing cut) chop in chunks

  • 3 yellow onions (Quercetin!) peeled and quartered

  • 2.5 TBSP of curry paste (see picture for the one I recommend)

  • 3 cups of chopped tomatoes

  • 1 large stalk of fresh lemongrass (bruised with a heavy object)

  • 3 whole star anise

  • 2 tbsp of Red Boat fish sauce (or no sugar or additives brand)

  • 1 cup of bone broth (see picture for the one I recommend)

  • 5 large organic carrots (chopped in large chunk circles - 2cm)

  • Optional 4 cloves of garlic (peeled and bruised)

Instructions:

I love my pressure cooker but you could easily alter this recipe to work in a slower cooker.

Put all the ghee in your pressure cooker and melt on “saute” then toss in your curry paste and garlic cloves (if using). stir for a 1 minute or 2.

Add half your chopped beef and stir around to coat in the ghee and curry spice paste, lightly cooking the outside of the chunks of meat. Remove this batch of meat and put the second batch in and repeat.

Take out the second batch of meat and add in tomatoes, and saute until getting coated and a little softer.

Add all other ingredients including your meat, stir everything around to fully combine and immerse all meat, carrot and onion under the liquid. Close your lid and cook on “manual” for 35 minutes - allowing the pressure cooker to let out it’s pressure without your assistance.

Enjoy with fresh basil leaves on top 🌀
